The GI value, or as it has now become known, the glycemic index is a rating system of carbohydrates according to the SPEED with which they raise the blood sugar after eating.

Low GI have benefits for weight control in several ways because they reduce appetite and control hunger.

I suggest you look at a glycemic index food chart.

If you can slow the conversion of carbohydrates to sugar their is a much greater chance of your body being able to use the sugar and therefore not convert it into fat.

I reccomend you try and settle for a low glycemic diet.

Because your body can only use a limited amount of sugar in any given time, it has to do something with the surplus.

What does your body do it do with what it can't immediately use?. It doesn't want to waste it, SO IT IS CONVERTED INTO FAT and stored for future use.

This was a very handy arrangement a few thousand years ago as it helped us survive in the lean times.

Over the intervening years when our ancestors were living mainly off proteins from fishing and hunting we didn't have this problem, but now when we are living mainly off carbohydrates,--- it's a far different story.
